Super Simple Enchiladas

We tried this recipe out of the cookbook from our church...and it is YUMMY and very easy!!! Anyone that knows me, knows that I am NOT a cook :) I am acutally known for my goof-ups in the kitchen.

Ingredients:
1 lb Hamburger
16 oz of Monterey Jack shredded cheese (I actually prefer Colby Jack with just a little extra cheddar)
1 pkg flour tortillas
1/2 onion - chopped
3 c enchilada sauce (we like Old El Paso - Mild brand...I buy one 10 oz & one 14 oz can)

Preheat oven to 350 degrees. Brown hamburger and onion. Drain. Mix in the 10 oz can of enchilada sauce and about 1/2 c to 3/4 c of the cheese. Spread some of the mix on a tortilla shell and roll. Spray 9x13 casserole dish with vegetable oil and place rolled shell in the dish. Repeat with remaining shells - lining the rolled shells up across the dish. Poor remaining exchilada sauce (I use the 14 oz can for this) over the top of the rolled shells. Cover with remaining cheese and bake for 35 minutes.

It's THAT simple!!
