Basil Chicken & Pasta

A blogging friend shared this recipe awhile back and I thought it sounded good so we tried it out and loved it. Plus it is pretty easy to make! Enjoy :)


Basil Chicken & Pasta
1/2 pound of angel hair pasta
olive oil
1/2 cup finely chopped onion
about 1 TBSP minced garlic
3-4 chicken breasts, cut into chunks
1 can diced tomatoes w/ basil, garlic & oregano (I use Hunts brand)
1 - 1 1/2 TBSPs dried basil
salt, pepper
Parmesan cheese (I use the grated kind sold in the refrigerated section in plastic bags)

1. In a large pot, cook angel hair according to package. Meanwhile in a skillet, heat oil. Toss in chicken, sprinkle with salt & pepper and cook until no longer pink. Add onions and garlic. Cook for 5 or so minutes, until onions are soft.

2. Sprinkle basil all over the chicken mixture. Add in diced tomatoes with their juice (I usually put a little water in the can and swish it around and add it to the mix to give it a little more liquid). If you want a bit of heat, sprinkle in a very small amount of red pepper flakes. Cover skillet and simmer for a few minutes.

3. When pasta is cooked, drain & return to pot. Add in the chicken / tomato mixture and toss to incorporate*. Spoon into bowls and top with grated cheese.

*We prefer to leave it seperate and let each person decide how much chicken/tomato mix they want on their noodles
