I was looking on-line for a recipe for London Broil steak (found some for a good price at the grocery store and it looked like a good piece of meat). Anyway, I found this really yummy and easy one (sorry I don't remember where), so I thought I would share it here :)
You need:
London Broil Steak (other cuts would probably work fine too)
2 cans cream of mushroom soup
1 env. Lipton onion soup (or in my case, since I didn't have this, McCormick's Onion Gravy env. with about 1/2 can of water...using the empty soup can to measure)
Using a 9x13 in pan, or larger if needed, line the pan with pieces of aluminum foil folded to make a seal. Foil should be long enough to fold loosely over meat forming a cooking bag.
Place meat on foil. Combine cream of mushroom soup and onion soup (or the onion gravy & water). Pour over meat, covering completely. Close the foil at the top and sides to form a sealed cooking bag. Bake at 350 degrees for 2-2.5 hours. Serve with its gravy.
I also made egg noodles (using a little bit of the gravy on this on our plates) and fresh, steamed broccoli. YUMMY!! and SO easy!!

Not too much happening around here. The boys and I did some shopping yesterday. Not really fun shopping - SAMS and the grocery store - but needed to be done. Thankfully they were both REALLY good. Almost made me want to venture out again with them today...lol...only it is raining off and on here :)
Both John and I lost a little weight during our first week of Weight Watchers. Don't know about him, but I lost 5 lbs. Not bad for a week! And I am finding that my stomach must already be shrink a little since I wasn't able to finish my Nakato meal on Sunday (usually I am even a little hungry after it). So points counting we continue!!
Well...sounds like Zach is up from his nap so time for me to quite playing on the computer!!

Now that sounds like a yummy recipe that even I could make! Glad your boys were good -- I took mine shopping for 3 hours today and I'm about ready to check myself into an institution. Running down the aisles, sliding under clothes racks, climbing on product shelves, knocking over chairs.... ARGHHHHH!!!
PS, Thanks, Jen, for the info and the link about the coconut! I'm still in shock that I really have to use a hammer! (I don't even have a meat cleaver, thank goodness...)
